Oliver Salad
Now renowned throughout the world the potato salad is a real treat for the palate. Served mainly as a starter, but also ideal for accompanying dishes of various kinds, it is composed, as we know, from various ingredients mixed with mayonnaise. Conceived in the late nineteenth century by Lucien Olivier in the kitchen of a restaurant in Moscow and originally consisted of cold meat, sausage, ham and truffles, all decorated with capers and anchovy fillets, and sometimes was also used aspic , incorporating a delicious jelly that helps give the dish a special flavor. A recipe era so important that it be kept secret from its creator: the Russian salad soon became very popular among patrons of a local and probably turned in his signature dish.
