Finocchiona
So called because of the flavored with seeds of fennel (that, in fact, finocchio means fennel in Italian), the Finocchiona is a typical Tuscan salami made with ground pork and bathed in red wine. Present and widespread particularly in the area of Florence is packaged in forms larger than those of a classical salami, the preparation of this delicious sausage provides for the use of the part of the belly and the shoulder of the pig, in addition to a long maturation period of at least five months, after which the Finocchiona is ready to be savored as a meal and how many other combinations of other delicacies such as meats and cheeses. For the gourmet palate is more refined as not to lose the combination of a good glass of fine white or red wine. |
