Arancini
Typical of Sicily, arancini, (called, especially in the western part of Sicily, also arancine), are a real delicacy hearty and delicious: fried rice balls with a diameter ranging from 8 to 10 centimtri, stuffed with meat sauce, mozzarella and peas. The name derives from the typical form and color, reminiscent of an orange, even if, sometimes, especially in the eastern part of the island can also assume a conical shape. Probably imported by the Arabs, who used to eat rice and saffron flavored with herbs or meat, oranges owe their delicacy even the breading that, traditionally, is often traced back to the court of Frederick II, when he was looking for a way to carry with if 'the dish on travel and hunting: the crunchy breading, in fact, ensured excellent preservation of rice and seasoning, as well as portability, therefore, it is assumed that initially it is characterized as the orange-away food probably also for his work in the country. What is certain is that it is a delicacy that can whet the appetite of the most refined palates. |
