Macco di fave
A traditional Sicilian dish, the macco di fave is popular in the western part of the island, especially in the municipality of Raffadali. It is a cream made with _ a long cooking time of dried beans to which is added to a vegetable, usually of beets, and served with the only seasoning and extra virgin olive oil is tasted like soup or as a main dish. Of ancient origin, and it seems it was known in ancient Rome, the the macco di fave _ is a simple dish of peasant culture and at the same time very nutritious and is the star of an annual festival which takes place March 19 to coincide with the feast of St. Joseph in Ramacca, in the province of Catania. |
