Typical Piedmontese sauce made from tomatoes and onion, red is the bath, as altrone of the green sauce, a condiment for boiled inevitable, tomini, boiled meat and other various dishes and therefore ideal to enhance the flavor of dishes whose preparation involves the use of 6 or 7 very ripe tomatoes, 2 onions, a carrot, two cloves of garlic, red pepper, 120 g. sugar (traditionally including honey), red wine vinegar, olive oil and salt, which must then be crushed and mixed and, as with the green sauce, even the red bath is prepared in late summer, only to be consumed during the cold periods of the year. |
