Pizzoccheri
Related with the noodles, the pizzoccheri are a delicious type of pasta typical of Valtellina that can be enjoyed in various ways as it is for the most famous types of pasta: with asparagus, broccoli, beets, artichokes, broccoli, chickpeas, potatoes, mushrooms and other delicacies that can clearly be tasted along with other condiments such as sauces or meat sauce known as pesto. Derived from a mixture prepared with two-thirds of buckwheat flour, which denotes their gray color, and a third of wheat flour, the pizzoccheri are ideal for lunch or an elegant dinner or simply to satisfy their taste buds. Among the types of pizzoccheri undoubtedly be counted even those of Chiavenna, a particular variety of dumplings, made with wheat flour and dry bread soaked in milk. |
