A type of pasta typical of the Ligurian cuisine is distinguished by the decoration that have these little circles of dough shaped medallion. This decoration is obtained a stencil wood that decorates the dough so as to receive better prepare the sauce, stencils which can be found in some craft shops of the historical center. Paralleled by a handicraft production, there is also an industrial production corzetti which is normally made with ravioli machines. Made most likely at the behest of the nobles of the past it seems that they order their cooks to make a type of pasta, which would contain its own coat of arms, corzetti (also called croxetti) are great to taste with walnut sauce, sauce with mushrooms and of course, pesto.
