Frico
Dish par excellence in the culinary traditions of Friuli cheese baked in a pan with butter or lard. Soft or crumbly, frico is an irresistible dish that can be served and enjoyed both as a hearty appetizer or a delicious meal to satisfy the palate of the most finest connoisseurs. Although today the frico is seen as a festive dish, its preparation was originally aimed at the recovery of waste cheese. The frico brittle (or brittle) can be eaten as a snack hearty and delicious and it is ideal for terrines or mushroom fondue montasio. The frico soft, however, is prepared with different curing the cheese, potatoes, butter or oil and salt, looks like a big pancake.
