Elderberry soup
A delicacy typical of the northern regions of Germany to taste for the intense and tasty flavor. It is a soup realized with wild elderberry, which are cooked in small dumplings (Klöße) of wheat flour or durum wheat semolina, whose preparation involves cooking the elderberries with sugar, which juice obtained is passed through a sieve. Then you add the starch, lemon juice (or alternatively lemon slices) and other fruit cut into chunks (apples or pears are generally used). Sometimes, on the whole are added cinnamon and cloves to enhance the taste and goodness. In this compound are then made to cook the dumplings of flour. |
