Tarte Tropezienne
Typical sweet of the culinary tradition of Saint-Tropez, the tarte tropezienne is a delicacy only for those who wish sweet and intense, the recipe for which is, not surprisingly, filed and secret and is still made up of a croissant topped with sugar and filled by a mixture of three creams, according to a source familiar recipe of the pastry chef Alexandre Micka. Flavored, essence of orange blossoms, the tarte tropezienne is filled with butter cream and custard, and the origin of the name is singular: joint in Provence in the early '50s, Alexandre Micka decided to open a boulangerie patisserie in Saint-Tropez, which sells a sweet brioche-made according to a recipe brought from Poland and, after presenting his tarte, Brigitte Bardot suggested he call it Tarte de Saint-Tropez, so that the pastry chef opted Tarte for Tropezienne.
