Ajiaco de Bogotá
A hearty dish of Latin American cuisine, the Ajaco is a kind of nutritious soup that is usually made using ingredients such as vegetables or chopped potatoes with bits of meat of various kinds. The Ajiaco de Bogotá (or ajiaco santafereño), in particular, is a chicken broth which can be realized even with the addition of cream and capers in brine, large pieces of cob, and, last but not least, various kinds of native potatoes that over to give depth and volume to the whole and beyond to help give a different flavor to the soup, give the dish its characteristic dark yellow inviting. The dish is usually prepared and served in a clay bowl, and to provide additional fragrance, is used locally called Guasca herb that helps to give the whole a very particular taste, contrary to what might seem, not ajiaco is a spicy dish. Easy to prepare, also due to the relative ease on the availability of ingredients, Ajaco is currently an internationally renowned dishes of Colombian cuisine. |
