Fish and Brewis
The abundant presence of fish off the coast of Newfoundland has allowed the realization of a genuine and delicious dish: fish and brewis, a hearty dish of salt cod (or any salted fish), hard bread (or hard tack) and fat pork is a recipe invented by sailors who once were far away from the coast for long periods of time and that, therefore, sought each food that they could endure such long journeys. Easy to prepare, the recipe calls for the use of three basic ingredients: in addition to cod and pork fat, brewis is added during the preparation; it is hard bread (or crackers, not coincidentally also known as ship-biscuits or sea-biscuits), which is soaked in water to be softened course. A fried pork fat, cut into cubes is often supported at all to give the dish a fragrant and appetizing flavour. |
