Harissa
Used to give the food a special flavor and delicious spicy sauce, the Harissa is a typical North African and especially common in Tunisia, based on fresh red chili, garlic, to which you add the olive oil. Similar to the tomato paste, the harissa can sometimes be made with other ingredients such as coriander, cumin, caraway or tomatoes. Often used to accompany various dishes such as pasta, soups, salads, couscous and kebabs, the harissa, (characterized by an attractive bright red), is also ideal for appetizers consisting of olive oil and black olives fragmented, and can be enjoyed on various pieces of bread. |
